Did Somebody Say Brunch?

Cheers to the weekend, all! It’s Friday, and with most of us cooped up indoors, it’s getting hard to differentiate the days. So this weekend, instead of pouring another bowl of cereal for Saturday morning breakfast, surprise your family with a DIY brunch! It’ll be a great way to get everyone out of their funk, while also spending quality time together that has a tasty end result.

Ready To DIY Your Weekend Brunch?

To make a brunch that everyone will love, take a look at what you already have in your pantry. Many of us stocked up on pancake mix and eggs, a weekend staple for most. But maybe you also have fresh or frozen fruit on hand, bread and deli or fresh meats, too. Take a look at some of these brunch recipes your family will love.

Banana Bread

If your family is anything like ours, your household may go through fruit sprits eating the same fruit everyday, no complaints until suddenly, they don’t want it anymore. Right now, we have a few bananas that unfortunately nobody grabbed before they started to turn.

Luckily, that means we can take those bananas and make a delicious banana bread that will be great for brunch and to snack on for the coming days. To make banana bread, all you need are:

  • Ripe bananas
  • White sugar
  • Eggs
  • Butter
  • Flour
  • Baking soda
  • Salt

The nice thing with recipes like this, you can alter it to the ingredients you have. So if you have a ton of bananas, you can make a few loaves. Or if you want to save some of those bananas for muffins or more bread in the future, you can store frozen mashed bananas for up to six months.

Breakfast Skillet

There is nothing more satisfying than a meal you can make all in the same pan. And for your weekend brunch, this breakfast skillet is just that dish! To make this loaded skillet, you need:

  • Potatoes 
  • Bacon
  • Onion
  • Water
  • Garlic
  • Green Onions
  • Paprika 
  • Kosher salt
  • Black pepper
  • Eggs
  • Shredded cheddar cheese

The cool thing about dishes like these is that you can use this as a guide. If you only have white onions instead of green, you can mince more white onion into your dish to get that stronger flavor–of course, if you don’t love the onion taste, then drop the green onion altogether.

The key is to use your favorite things. Don’t love bacon but have sausage on hand? Mince it up and substitute. You can make this dish your own!

Chocolate Chip Waffles

This next dish is great because that pancake mix in the back of your pantry will really come in handy. And if you have chocolate chips (or even a chocolate bar you can crunch up) you will have a sweet treat for your Saturday brunch!

To transform your pancake mix into a waffle batter, just add an additional ⅛ cup of oil to your batter. This will increase the fat content and make those super fluffy waffles your family loves!

And don’t forget before closing your waffle maker (you know, the one you got for Christmas ages ago that you never really use) be sure to sprinkle in some chocolate–or even sprinkles! If you want to cut down on the sweets but still want some flavor, pull out frozen or fresh berries and sprinkle them on top!

Ham, Egg, and Cheese Sliders – A Real Brunch Treat

Who doesn’t love sliders? Whether it’s a burger, chicken salad or roast beef, we love a good slider for dinner. But why not take the ease of a slider and make it into a brunch treat?

To make these ham, egg and cheese sliders, all you need are:

  • Slider buns
  • Butter or olive oil
  • Eggs
  • Salt and pepper
  • Ham
  • Sliced cheese
  • Salted butter


We know not everyone has buns or rolls on hand to make this dish. But you could give your grilled cheese a makeover by following this recipe! Take your bread and begin the grilling process, adding your sliced ham and cheese. In another pan, make your eggs. Once your cheese begins to melt, add the eggs to the sandwich and top with the other half of bread.
